Here’s an easy but yummy way to say “Good Mornin’” to the household! I’m always on the hunt for easy ways to cook or serve breakfast because those early mornings can be such a rushed, hurried part of the day. This recipe is great because you can even make it the night before, and just do individual warm-ups the next morning. You can also play with the optional ingredients and substitute or add yummy stuff like mushrooms, sautéed onions, broccoli….and the list of goodness could go on. Ingredients:
- 1 package crescent rolls (The small can of 4 is enough to cover the bottom of my square 8 x 8 baking dish. If you are using different size dish you will need more.)
- 16 oz ground sausage (You can use lean ground beef or ground turkey, seasoned well with Tony Chachere’s for flavor.)
- 4-6 eggs, beaten (depending on size of baking dish) (*find pastured eggs from a local farmer, or buy organic free-range eggs with the most Omega-3s and DHAs available…or start your own backyard farm! Nothing tastes as good to me as the eggs from my very own farm. They make me -smile- )
- 2-3 cups shredded cheese (I use Kraft Mexican 4 Cheese Blend. You could use shredded cheddar if you prefer.)
- 1/3 cup diced yellow and red bell pepper (optional, but I love)
- 1/4 cup diced Roma tomato (add more to your liking)
- salt & pepper to taste
Directions:
- Preheat oven to 350. Spray 8 x 8 square baking dish with cooking spray
- Brown sausage (or meat of choice) in skillet. I always throw some Tony’s on the meat. If I am using ground beef or turkey, I season extra for flavor.
- Spread crescent dough in bottom of your sprayed 8 x 8 baking dish (If you are using a different size dish, you may need additional crescents. A small can of 4 covers my 8 x 8.)
- Drain sausage/meat and spread evenly over the crescent dough
- Pour beaten eggs over sausage (Before pouring, salt and pepper eggs, how you would season scrambled eggs, while whisking.)
- Generously top with cheese
- Bake at 350 for approximately 30 minutes (I like to leave it in a little longer so the cheese browns a little and the crescent is “just-right crispy.” Also, keep in mind how deep/thick your casserole is and how many eggs you have put into mixture. The thicker the casserole, the longer the cooking time. You knew that already…I taught school way too long.)
