Life on a ranch, to some, may sound relaxing. But if you’ve actually ever lived on one…well…you know. And then after making sure these chores are done, our day is just beginning because our real “job” (it’s a Divine calling but we can explain that in another post. lol ) is that we are priviledged to pastor some of the greatest people on the planet. Now THAT is wonderfully consuming. Then on top of that, I travel as a speaker and recording artist (singer). I am vice-president of a humanitarian organization (work which i adore). A mommy of 2….a wife of 1…. ok….let’s stop now cuz I’m getting dizzy and overwhelmed already.
I said all that to say that I am always looking for QUICK AND EASY recipes. I absolutely love to cook and I do so every chance I get. This recipe fits that bill precisely because guess what? You don’t even have to dirty a mixing bowl or anything. It’s a one-dish wonder!! Disclaimer: This is NOT a healthy recipe. Ok…I feel better having at least warned you.
Ingredients
29 oz can sliced peaches (I prefer Del Monte. Also you can choose light syrup or heavy syrup, depending on how sweet you want it)
1 package of yellow cake mix (I like Duncan Hines yellow butter cake mix best. Betty Crocker and Hodgson Mill both have gluten free cake mixes.)
1 stick salted butter
1 cup packed brown sugar (have extra for coverage)
*1/2 cup chopped nuts (optional. I don’t use nuts. Walnuts would be a good choice though.)
Directions
– Preheat oven to 350 degrees F
– Layer the ingredients in a 13 X 9 glass baking dish
– Pour in peaches first. Use kitchen scissors to cut the slices into smaller bite-size pieces so they can spread more evenly.
– Next, carefully sprinkle the cake mix, making sure it is evenly spread over all the peaches. Do not stir.
– Then cut your stick of butter into thin but equal slices, trying to cut about 24 slices so you can have rows of 4 and 6.
– Carefully lay them on top of the cake mix evenly.
– Now sprinkle the brown sugar over the entire mixture. Remember the brown sugar is what will give your cobbler the crunch, so make sure every part is covered. Clumps are great because they give extra crunch.
(Note: Some who like nuts…you could sprinkle nuts on at this point if you wish. Walnuts would work well.
However, if you don’t want to burn them, you may want to cook the cobbler about 15 minutes without the nuts. Then add them and cook the remainder of the time.)
– Now place your cobbler into the preheated oven and bake at 350 for 30 minutes.
– Then turn your oven up to 450 and bake another 10 minutes.
– Check for crunchiness. I cook mine longer for more crunch. But this is where you can experiment and see what you prefer.
– Of course serve warm with your favorite vanilla ice cream.
